Flourless and Sugar-Free Chocolate Cake

Original Recipe Yield One 8-inch Cake

Ingredients:

  • 4 oz. fine-quality bittersweet chocolate
  • 1 stick unsalted butter
  • 3/4 cup granulated Stevia
  • 3 large eggs
  • 1/2 cup unsweetened cocoa powder plus additional for sprinkling

Directions:

  1. Preheat oven to 375 F. Butter an 8-inch round baking pan.
  2. Chop chocolate into small pieces.
  3. In a double boiler or glass bowl, set over a saucepan of slowly simmering water. Add chocolate and butter and stir together until fully melted and smooth.
  4. Remove top of double boiler or bowl from heat and whisk sugar substitute into chocolate mixture.
  5. Add eggs and whisk well. Sift 1/2 cup cocoa powder over chocolate mixture and whisk until just combined.
  6. Pour batter into pan and bake in middle rack of oven for 25 minutes or until the top has formed a thin crust.
  7. Remove cake and cool on a rack for 10 minutes. Turn upside down and onto a serving plate.
  8. Dust cake with additional cocoa powder.
