Mediterranean Salad

Recipe Yield 4 Servings

Ingredients:

  • 3 tablespoons extra virgin olive oil, divided
  • 1/4 t sea salt
  • 6 cups organic arugula (about 4 ounces)
  • 1 cup thinly sliced green onions
  • 1/2 cup tomatoes, chopped
  • 1/4 cup thinly sliced basil leaves
  • 1 1/2 T balsamic vinegar

Directions:

  • Combine arugula, green onions, basil, vinegar, tomatoes, and 3 tablespoons olive oil in large bowl and toss. Season with salt and pepper
  • Divide greens among plates.

THIS SALAD LOOKS SO GOOD- I'M GOING TO MAKE IT.

The mediteranean salad recipe does not have the ingredients shown in the picture. It shows cucumbers, black olives and what I imagine to be feta cheese cubes? Are those MS friendly?

The picture is what makes me want to make it.
