Simple Carrot Ginger Soup

Original Recipe Yield 6 Servings

Ingredients:

  • 3 T olive oil
  • 1 yellow or white onion, chopped
  • 1/4 cup peeled and finely chopped ginger root
  • 3 cloves garlic, minced
  • 6 cups vegetable or chicken stock
  • 1 1/2 pounds carrots, peeled and cut into 1/2 inch chunks
  • 1 t turmeric (optional)
  • Salt and ground pepper
  • Optional garnishes: chives or parsley

Directions:

  1. Saute onion, ginger, and garlic in olive oil for 5-10 minutes.
  2. Add the stock and carrots and bring to a boil. Reduce heat and simmer uncovered over medium heat until the carrots are very tender, about 30 minutes.
  3. Puree the soup with an immersion blender or in batches in a blender or food processer.
  4. Season with turmeric, salt, and pepper to taste. Serve and enjoy.

Just started trying to overcome M.S. with diet, going dairy and meat free. My husband, such a hero, is doing it with me. I'm less than a week in so thrilled to find your recipes . I also have R.A. and a nut allergy, nothing is straightforward. Have ordered a spiraliser today, going to give it a twirl.

Hi Lynn, that is so great to hear! I just started the Whole30 diet and feeling great on it. You should check that out. My wife is also on that diet with me. And kudos on the spiralizer! We've been able to make some many cool and healthy recipes with this... enjoy and good luck on managing your MS through diet :)
