Greek Pasta with Tomatoes, Olives, and Spinach

Original Recipe Yields 6 Servings.

Ingredients

  • 2 (14.5 oz.) cans Italian-style diced tomatoes
  • 10 oz. fresh spinach, washed and chopped
  • 8 oz. of your favorite olives
  • 2 garlic cloves, chopped
  • 8 oz. penne brown rice pasta
Directions
  1. Cook the pasta in a large pot of boiling salted water until al dente.
  2. Meanwhile, combine tomatoes, garlic, and olives in a large nonstick skillet. Bring to a boil over medium high heat. Reduce heat, and simmer 10 minutes.
  3. Add spinach to the sauce; cook for 2 minutes or until spinach wilts, stirring constantly.
  4. Add pasta and stir for 2 minutes. Serve and enjoy.
